Dry-Rub Grilled Chicken And Chips With Poi-Poi Sauce

I love grilling and I have been grilling different types of protein for a long time and I’m not new to marination.

I have written on many spices and sauces I have used to marinate on this blog. However, I discovered a new sauce recently that blew me away.

This packed sauce is called Poi-Poi Sauce. In this post, I will be writing extensively on how I did a dry rub spice marination and used Poi-Poi sauce as secondary sauce.

POI-POI SAUCE

Poi-Poi sauce is a well blended mix of pepper and many spices and roots which uplifts the taste of any type of food.

The beauty of the sauce is the ability to use without cooking. It can be glazed on bread or eaten directly with rice, beans, pasta etc. It can also be used as stew and condiment.

I have used it to prepare many dishes and I’m going to be posting them gradually here.

OK! LET’S DIVE IN…..

DRY-RUB INGREDIENTS

  • Curry
  • Ground red pepper (60%)
  • Ground Seasoning (To taste)
  • Salt (To taste)
  • All Spice
  • Onions

PREPARATION

Firstly, you prepare your chicken parts or whole chicken, clean and pat it dry.

Then, you chop very finely your onions and add.

After this, mix all the dry ground spices together and pour in.

Mix very well and set aside for about 30mins to hours (Depends on how quickly you need to prepare it. However, the more it marinates, the sweeter it will come out)

After Marination, prepare your grills and set chicken on the grills. Note that I didn’t mention groundnut oil. The chicken will generate its oil at this stage.

Grill and turn after 15 mins so both side can be grilled.

At 45mins, mix your Poi-Poi sauce with groundnut oil and brush both sides of the grilling chicken down.

Leave to grill for another 15mins before taking off.

SIDE DISH

Get some processed chips, season it (Leave little mixed dry-rub spice you used for the chicken for this) and fry to your desired golden colour.

There are other things you could have on your plate like grilled or fried chicken franks and grilled plantain.

Its the perfect grilled dish!

It’s simple, tasty and delicious and the African flavour the Poi-Poi sauce brings to the dish is awesome!

Part of the traits of being an higher animal involves structure. Structure in going about our daily activities from the simplest one to the hardest task.

One of these structured ways is the right way to behave when dining with people.

You might think you don’t need to learn about this until it comes to hunt you.

Imagine a situation where Your boss which is an European or probably one from the middle east invite you for dinner.

You will need to not only know how to dine properly but also how to appreciate your host after the meal.

For example, in some part of the middle east, you have to burp after food to show your host you really enjoyed the food while this is regarded as bad table manners in some other parts of the world.

Moreover, If you are invited for Fine dining, How do you set your cutleries to pass a message to the Chef without talking.

These are some of the things you will learn today. Okay, Lets start.

 

Table Manners And Dining Etiquette

 

EATING WITH A CLOSED MOUTH: This is approved by all standards. Only uncivilized people eat noisily with an open mouth. When eating, your lips should be closed while your mouth is chewing with less noise.

Eating with your lips shut will prevent people seeing the chewed food in your mouth and food spilling out which can be very disgusting to your host or the people you are dining with.

 

Strategic Fork And Knife Placement

If invited to a fine dining, your cutlery positioning can communicate to your chef whether you are done eating, you want more, you love the food, you are displeased etc. Below is an image that shows this;

Wine Etiquette

One of the first thing you should when offered a bottle of wine is to find out if your wine is alcoholic or non-alcoholic. You should also check the percentage to know how much you will take.

Drinking the wine

Don’t gulp your wine so you could take in all the goodness and flavour of the wine. Hold the stemmed wine glass just below the base, twirl gently the wine glass, savour the smell and drink slowly.

You can gulp your juice however you want but wines are supposed to be enjoyed. If you have to first drink water so you could enjoy your wine, please do so.

How Do You Eat Your Meat?

When in the comfort of your home, you are afforded the luxury of destroying the flesh, bones, marrow and fluid. However, when you are in public or invited as a special guest, there is a way it is done.

By the way, you are within your right to ask for a take home pack for your protein but if you would eat it outside, there are ways to it.You can cut and eat with cutleries and these are in 2 ways:

The American fork flipping and the European style.

The American fork flipping is almost the same as European in that the knife are both placed in the right hand while the fork on the left hand.

Difference is after the meat is cut, the Americans drops the knife and flip the fork to the right hand to pick and eat while the European uses the left to finish the business without switching.

However, if it’s a funfair and BBQ is served. It’s safe to use your hands and clean up after yourself.

Except the bones are soft to eat and swallow, don’t attempt to start breaking bones and chewing.

 

Some general bad table manners;

  • Don’t talk with mouth full of food. It can be very irritating
  • Reaching out to get food over another person’s food is not only a bad table manner but also dirty. You could introduce body and clothing particles and micro-organism. Ask for it to be passed to you.
  • Don’t be the one to start the eating. You don’t want to be termed a glutton. Let the host start. Be watchful.
  • Sit properly. You can make people uncomfortable and I won’t specify a chair because not every race uses chairs to dine.
  •  Some will say talking while eating is bad. I partially disagree with that However, my opinion is the subject of discussion. Be wise to choose a merry subject that won’t make people lose their appetite.

Lastly, always remember to make more researches like you doing now. Who knows, your eating habit might be your winning tool.

My Experience At The Ongoing Gt Food and Drinks Festival, 2019.

The on-going Gtb sponsored food and drink programme started few years ago, 2016 to be precise and it has featured the best of the best vendors across the country.

Not only that, it has brought in some world renowed chefs across the globe.

It started with Internationally Acclaimed Chefs like;

* Chef Siba (Siba’s Table)

* Chef Ed Kimba

* Chef Sunny Anderson (Food Network Star)

* Chef Raphael Duntoye etc

* Chef Jeff Mauro (The Kitchen) Etc

Also present are our own Chefs making waves around Africa and the World;

In summarily, the who of who of food and Creme de Lacreme of food are all present.

This is where I’m going. One impossible thing that Gt food and drink festival have been able to achieve is to bring together over 300 seasoned vendors across Nigeria.

This vendors are highly sought after and having them all assembled together in one place to a foodie is heaven.

My Lovely Experience

Going to the festival was a time of unwinding from my stress. Food is my hubby and work and eating food made by other vendors is a real source of joy for me.

Although, I missed not going with family and friends, However, I made up for it by eating the beat of the best foods the festival have to offer.

I started with desserts. I wanted to wet my appetite with a sweet confection and zizi’s chocolate cake was a winner.

Good thing about the festival is many of the vendors offers free tasting of their products and zizi’s chocolate won me over.

The cake was rich in chocolate and divine. You still have the opportunity to get it as it is still currently on. I made a video for your viewing pleasure.

Then after my chocolate, I decide to attend a master class by Chef Shota from Nagasaki on The Art Of Making Sushi.

Chef Shota used Starchy or cake making rice. Boiled it with vinegar, sugar salt.

Filling was sliced cucumer and carrot while the wraps was seaweed.

It could be enjoyed with different sauce or soysauce.

It was awesome time of lecture. The lecture lasted about 1 hour after which I decided to go for BBQ and Sliders from Wing it.

I ordered for two packs of Spicy wings and Beef Sliders from Wing It; One for me, one for my gangs at home.

This decision I didn’t regret because it was the tastiest wings I have ever tasted. I loved it.

I had to restrain myself from eating the second pack.

Before I left, I took a cup of cocktail which I said should include 2 shots of gin. I literally didn’t feel anything until after 3 minutes and I was floating… Lollll

Summary is; I enjoyed my time and more good news is the fact that the festival is still on and we have a public holiday by Wednesday which is May 1 (Workers day).

Plan to be there…. What a wawu!!!!!

How To Make The Easter Nigerian Stir-Fry Pasta

THE ART OF STIR-FRYING

Stir-frying is not a new concept However, it is an advanced way of cooking and this is what you need to learn to prepare a wonderful pasta this Easter holiday.

Stir-frying requires being very strict with cooking time so it doesn’t get soggy.

If the pasta is overcooked when pre-cooking (par-boiling), it will become soggy and the stir-fry is not going to come out fine.

These amidst many rules of stir-frying will be discussed in the course of these write-up.

Most grains (dried foods) can be stir fried and stir frying technique cut across different food processing and preparation.

This is when Food is fried on high heat while stirring vigorously.

Sometimes, it might involved mixing (stirring continuously) processed foods with their corresponding sauce while frying on high heat.

Benefit Of The Stir Frying Technique

  • This method preserves food nutrients and prevent overcooking
  • It adds to the beauty of the food making it to glister and less soggy
  • It saves food materials like oil and other ingredients needed.
  • It makes your food more tasty.

How To Make A Stir-Fry Pasta

These involves two food processing steps;

  1. Par-Boiling The Pasta
  2. Preparing The Sauce

Par-Boiling The Pasta

I used pasta in these write up because there are different types of pasta ranging from Spaghetti, Gnocchi, Farfalle, macaroni to Campanelli.

You can use of these and more to make a stir-fry even rice. So, these are the steps to parboil pasta.

Preparation

Put enough water on heat depending of the amount of pasta you want to pre-cook, add salt and half teaspoon of vegetable oil (This is to prevent clumping of the pasta).

Make sure the water covers it so it can be drained off.

Cook at medium heat for 5-10 minutes depending on the type of Pasta you are preparing.

Drain of the water and set aside.

PREPARING THE SAUCE

This is where the work is. This is where you decide the type of pasta you want to prepare.

You can even make it a Sea food or a Soul food depending on the ingredients you use as Sauce.

You might even decide to go Chinese or Japanese and prepare a ramen.

However, the sauce I’m preparing is a simple garnished Vegetable sardine pepper sauce. You are free to add crayfish, dried fish, cowskin, cow intestine, grilled beef, chicken etc

INGREDIENTS

* Sardine

* Tomatoes

* Habanero pepper

* Onions

* Spices (Curry, yaji spice, ginger)

* Seasoning

* Salt to taste

* Carrot

* Green pepper (Optional)

* Groundnut oil

PREPARATION

1. Food Preping: As a chef, whenever I’m to make a stir-fry, I prepare my garnishes afore-hand.

This will make the food preparation easier and faster.

So my carrot has been diced, green pepper sliced, pepper has been coarsely blended or chopped and my pasta has been been parboiled and refridgerated. (Not Frozen).

However, if you have enough help, you might just do it all at once.

2.  Set your Pan on medium heat and pour in your Groundnut oil.

( This is a very important aspect of making the stir-fry and this is because the cooking oil must be enough for the stir-fry)

If it’s too much, stir-fry Pasta will be  too oily, if it’s too small, the overall pasta wouldn’t come out with the right colour and might probably be dry.

3. Leave for about 45secs to 1minute and Pour in your onions; leave to fry a bit before adding pepper, dried fish and cowskin etc.

4. After 2-5 minutes, season it, add your sardine, carrot and other veggies you decide to use.

( I added lastly the carrot and sardine because I don’t want the carrot to get too soft and I dont want the fish minced before stir-frying starts).

5. Set Aside.

STIR-FRYING

Now you have your salted parboiled pasta and your sauce.

Process

On high heat, pour in your pasta into the sauce and stir continually until the sauce covers the whole pasta.

Taste to check if its perfectly seasoned. Stir more for about 2minutes.

Reduce the heat and cover for about 2minutes and put off.

In the case of the cooking for 8-10 people and you don’t want to use 2-3 frying pans, divide the sauce into 2 or 3.

On high heat, pour in half of the pasta in and stir until the sauce fully covers it.

Pour the remaining pasta in and the sauce on top. Stir all together and cover for 2 minutes before putting off the heat sauce.

THE PROCESS

Can food be cooked without water? Definitely not! However, It is discovered that most of the food we cooked already are made of over 40% natural water and there might not be need to add water again.

Its special construction allows food to cook in its natural steam.

To cook with the pot, fill the pot with the food materials that has been washed, turn on the heat and wait till the pot temperature reaches the green spot.

Lower the heat to retain the temperature on that level.

The water in the food joined with the drops from the water you used in rinsing will rise as steam and condense on top to cook.

Do not lift the lid so the steam does not escape until you are sure the food is cooked.

This will ensure that the food’s nutritive, biological values and organoleptic properties are reserved.

This exclude the dried foods like rice, flour cereals etc.

Process of frying without oil/fat

It is generally known that most proteins have natural fat. So it is advised to fry without fat.

The pot is heated till it enters the green level of the temperature sensor on top. Then, the heat is reduced to a minimal level.

Another way to know if the frying pan is at the right temperature is sprinkle water on it. If it bounces off, its at the right temperature.

Lay the meat on it and press down with a fork. Allow to stay for about 1-2 minutes before flipping over.

Repeat this process until your protein is fully cooked.

Why Most Men Take Alcohol and Beer


WHY MEN DRINK

It is said that “when the reason or the causative organism for an ailment is known, it is half solved already”

According to research, it is discovered that nothing less than 3 billion bottles of beer is consumed every year in Nigeria leaving out wine and gins.

One wonders who drinks all these when both major religions we have kicks against taking alcohol.

I will not be dwelling on whether alcohol consumption is good or bad.

However, I will be shedding light on the different factors that leads young boys becoming men to start drinking.

Also, I will be listing out the disadvantages of taking alcohol drinks and I will leave you to decide for yourself if to continue, regulate or stop.

Decision is yours! So let’s start.

6 Reasons Why You Might Drink As You Grow Into An Adult

1. COMMUNITY PRESSURE

As one grows into self realization, one of the first thing you will be made to understand from the older ones is the fact that beer and Spirit belongs to the matured ones which in itself is not bad.

So naturally, you are conditioned to believe that one of the rites of passage to adulthood is when you start drinking.

One is conditioned to drinking Carbonated drinks until you grow older and you can’t wait to grow older so you can ”feel among”.This is bad.

  • General mental and mind maturity and some other health dangers

3. THE BOLDNESS OF INTOXICATION

You have probably heard the common statement “Under the influence of Alcohol”. This has put many into trouble and well, sometimes out of trouble.

The mindset that taking alcohol makes one courageous enough to do things they might otherwise run away from.

Examples are:

* Show of affection

* Confrontations etc

  • Marital Issues (Here, the man doesn’t want to go home because the home has turned to a war zone and prefer to drown the sadness at the bar)
  • Debt accumulation
  • Relationship breakup (Love Issues) etc

Man tries to lessen the heart pains by drinking away their pains However, true peace lies in Jesus Christ.

5. COMPANY’S ADVERTISEMENT

This is the most common reason why men drinks which brings us back to the 2nd point; Peer pressure. While we can’t fault a beer or wine company from advertising, the contents of their adverts majorly most times centers around drinking as a measure of a mature, strong and classy man. This is wrong and it needs to be worked on.

Kudos to the beer company who now includes “Don’t drink and drive” in their advert.

6. THE DRUNK: For these set, there are no known reasons. You can take alcohol from them, you can’t take them from alcohol. However, they miraculously stay sane and in control with their drinking.

  • Drinking while driving causes accidents which has led to millions of death

Diclofenac is a very strong anti-inflammatory and pain relieving drugs which doctors usually advises a fully grown adult to eat before using.

This will literally almost kill the child as it’s overdose effect are dangerous.

Thankfully, the person that asked was a registered nurse. She raised alarm and strongly opposed him and he left in a hurry.

Another instance: I was in a 911 commercial bus when a marketer said that the causative organism for typhoid is dupakolis… (He mentioned one strange name like that to accomplice it and I wondered if there is nobody in this big bus that is a science student)

Being a Microbiologist, I knew it was Salmonella thyphi and even though, I raised the alarm in my corner, people were still buying.

The question that keeps running in my head was: How will your powdered drug cure my ailment when you don’t even know the name?

DIARRHEA INDUCING DRUGS

So I met a couple in another bus that really seem to be detected by these people. So I stylishly asked them why they seem so angry at the sight of these drugs marketers.

They told me they bought some recently because the marketer was so on point with their symptoms and also gave out her number.

They got home and used and in the 30 minutes, their stomach started grumbling. That was the Genesis of their toilet rotation. The man said they excreted till they had to call their neighbors to help as they thought they would die. They called the numbers they were given and it never went through.

Even after there was nothing in their stomach to pass out again, the feeling didn’t stop. In his words: “We nearly died”

Lastly, I witnessed the death of a friend’s dad who had appendicitis.l and died because they choose to go through these means instead of proper treatment in an hospital.

My summation is; while some people would try to convince you that some drugs do work for them, Endeavor to always go to a registered pharmacy or hospital instead of patronizing the public unregistered drug marketers be it traditional or Western medicine

Day I Nearly Died Making 800 Jam Donuts (Business lessons)

MY FIRST EVER BIG CONTRACT

IT was a beautiful weekly service and  after service, the student Church fellowship Leaders gathered together for a meeting.

They were organizing a church programme for the students in school.

So I was contracted for 800 Jam donuts by winner’s chapel campus fellowship.

I was so excited because it was my first ever big job… The highest I had done before then was 80.

First mistake was I under-billed them… I casually used my head and gave them a very cheap price.

Lesson 1. For whatever business you start, Create a planned revised price list which is reviewed monthly. This is because of factors like changes in market price,

They actually wanted to give me sometime to come up with a price but I was too excited to think.

It was needed on Sunday evening by 4:00pm.

THE STORY

So I started Saturday morning. My second mistake: I gathered together 5 people that had no experience with baking thinking they were going to do a good job.Only one lady was a good Baker.

Lesson 2: If you are given a job that is too big for you in terms of infrastructure and experience, Don’t try to do it all on your own. Try OUTSOURCING to a trusted company and DO ONLY WHAT YOU CAN!

If you are going to INVITE people to help, invite people that are experienced in the art. They will surely get the job done.

I forgot to eat because of the excitement of the work and gathered them together.

We started 12:00pm. From 12pm till 9:30pm… We were only able to do 185 jam donuts. That’s where I knew trouble has started…

By then, they were all grumbling they wanted to go. I released them and then realised I hadn’t eaten the whole day.

So I took a drink and little bread (I couldn’t finish half of the meal because I was tired and worried.

Getting to bring my equipments and the donuts home was another trouble which i would rather not go into. I hadn’t thought of LOGISTIC.

So I  later got to my hostel worn out and continued working till 5:00am… I had made 380 donuts… I had changed to ring donuts so it could be faster. ( The Jam was taking forever)

I slept around 5:20am so I could wake up and continue.

NEAR DEATH EXPERIENCE

Suddenly my eyes opened around some minutes past 7 in the morning. I wanted to continue working, then I realised, I couldn’t move any part of my body (Alas! I was paralyzed from head to toe)

Fear gripped me and I started panicking. Immediately, my unfulfilled life flashed before me and how I had boasted to anybody that cared to listen that I was going to be a billionaire Chef.

I tested my tongue and I realised I could still speak but weakly. Also, I was getting weaker and weaker; It was a battle to even keep my eyes open.

so I used my last strength to call out to my room mate sleeping beside me. Surprisingly, probably because of the course I was studying, I knew I was dehydrated.

He got up and I said salt, sugar and water; I can’t move!!

He was like: I have told you young man to stop all these self made rubbish ehn; at least, daddy sends money every month. What’s your stress man?!

I was able to stand some minutes after taking the water, sugar and salt but I was too weak to walk… So I was supported by my roomie to go and tell them that I’m not doing again.

Long story short, I lied that I did 450… They shouted and all… but I didn’t mind… I wasn’t doing again.

THE GET-AWAY

So I got a cab to get it down for me and immediately I got there, they were like I should wait for them to count it so they could be sure it was the 450 I did when I knew I did 380.

I told them I was going to pay the cab man…. Immediately I got to the cab, I jumped inside and told the driver to run as fast as possible…. (I cannot come and die).

I wasn’t paid my balance but I didn’t care. I was joyful that i didn’t lose my life doing donuts nobody sent me. However, I learnt my lessons afterwards and I grew business wise.

I restructured the business, went for business classes and became a better Chef and Entrepreneur. I hope you were able to pick something out of my real life food experience

What Food Causes Heartburn And How To Cure It

It’s a wonderful weekend and I’m writing about a topic that is very personal to me and have done much research on.

I stopped eating some foods because they cause serious heart burns for me.

Why do they cause heartburns? Can it be prevented? Is there a cure? All these are going to be answered in this post.

What Is Heartburn?

This is a painful burning sensation experienced mostly in the chest and sometimes in the throat (Thoracic cavity)

Although, heartburns can be caused by underlining diseases which when treated will automatically wipe off the burns.

However, there are several other causes of heart burns which are related to food and these are what we are dealing with today.

Examples are Spicy Foods, Alcohol, Proteinous foods etc

 

Some Heart burns truth.

  • Heartburn is a symptom of a wrong movement of food in the body which can be due to many reasons
  • There is no way we will talk of heartburn that we won’t mention Stomach Acids

What Are Stomach Acids?

These are a group of coordinated acids formed in the stomach majorly to aid digestion processes.

They are also called Gastric Acid and these include Hydrochloric Acid, Sodium Chloride and Potassium Chloride.

The problem starts when the acid that is supposed to be working in the stomach finds it’s way through any careless means to the chest and throat.

These wrong upward movement is called Acid Reflux. These happens because of many reasons for example, Eating large foods or Laying down immediately after eating.

Why do these foods cause heartburns to some and not to others

Like I said earlier, heartburn is a symptom. It can also become serious and form a Gastro-oesophageal disease if recurrence is high.

Being a symptom, one has to first see a doctor to know if it’s not happening because of the following problems;

  • Gastritis
  • Esophagitis
  • Stomatitis
  • Haital hernia

Most of these have to deal with inflammations from neck to stomach.

However, if we are dealing with acid reflux in relation to food habits, Here are the solutions.

  • Try and pin the foods that gives you heartburns and make sure you accompline the foods with a side dish that is alkaline in nature. For example, I personally develop heart burns when I eat beans so I accompline it with bananas when eating.

Other foods that can help with heart burns are;

  • Green vegetables
  • Water melons
  • Yoghurt
  • Hydrate by drinking water

Do not lie down immediately after eating.

You can use antacids which will relieve it Immediately.

Chewing gum to dilute the acid.

Eat little; avoid filling your stomach to the brim.

Exercise more to improve your overall body digestion processes and surely you will improve.

Effects of cyanide on the body

Low amount of cyanide in the body can be absorbed by the body and passed out of the body but significantly higher amount will prevent your body from using oxygen thereby killing the cells.

It affects the respiratory part of the body especially the lungs and other part involved in breathing and this can ultimately cause death.

Poisonous Mushroom

It’s very rare for you to eat the poisonous mushroom if you purchase it from the supermarket

However, if you are in the habit of picking mushroom around or buying in bulk on the farms, you should always have an expert check it out for you before consumption or else you will meet this nightmare popularly called the Death Angel

I’m not going to tell you about the effects; just know one thing, you eat it, you die if help does not arrive in good time. So be wise!!!

Nutmegs

I felt betrayed when I discovered this. Like why in God’s name will the public not be sensitized about the effects of this lovely nice spice.

As a Chef, nutmeg is one of my favorite flavour for many of my baked pastries although in a very minute quantity.

Anyway, it is good to know that the body can treat itself if consumption is minimal However, just 1-2 tablespoon of ground nutmeg over a period of time can cause hallucinations, irregular heartbeat, nausea and other mental issues.

Nutmeg can be used to induce hallucination so it’s recommended to keep it’s consumption minimal.

Unfermented Cassava and Green potatoes

Whenever you are about to experiment on food that you know nothing about, it is expedient you seek advise from chefs and food experts so you don’t end up poisoning not only yourself but everybody you cook for. Food poisoning is real!

Unfermented Cassava contains cyanide (scroll up to see the effect) which is very dangerous to health.

This is why our parents or workers when preparing Cassava at home or in the local industries always soak the Cassava with catalyst or use other processing methods to ferment and detoxify before it is ground into whatever they want to prepare be it FUFU or GARRI etc.

So also are Green potatoes, normal potatoes are good but when it comes to Green potatoes, there is need to detoxify by different processes before eating it.

Some Plant Leaves and Stems

Not all plant leaves and roots are vegetables to be consumed. A very poisonous example is the tomato leaves and stem. These are list of some of the popular leaves and stems of plant you shouldn’t cook or eat;

As a chef, I personally don’t fancy pizzas majorly because I feel they are over-rated, too expensive and also because many companies and restaurants I have eaten pizzas from didn’t impress me.

However when dominos came, they set a great standard by not only producing good pizzas but creatively tapping into our local cuisines and bringing out pizza recipes that identifies with the country.

A good example is the West African Suya Pizza of which we know where Suya comes from. This is one of my favorite because it’s more meaty and spicy unlike the tropical.

I believe whoever came up with the idea wasn’t brought up in West Africa because Nigerians, though love their Jollof , will prefer their rice on plate.

I have got mixed feelings with the invention of the dominos smallie Pizza which is less than 2$ (#550).

While I believe this will be a good opportunity for many who have always been wishing to buy pizza but couldn’t afford it because of the price, I’m of the opinion that the smallie pizza might break the pizza hype and prestige it has been enjoying for some time now.

In Nigeria for example, you just don’t wake up to go eat a pizza. It’s a “treat” because it’s not cheap. When you take your girlfriend out for pizza, she’s super exicted… Now, that’s “gone”.

The euphoria won’t be there as people that preferred to eat shawarma because of the price range can comfortably walk into dominos and order their smallie pizza.

However, don’t forget I mentioned earlier that I have a mixed feelings concerning it, so as I’m bereaving the death of the pizza hype in advance, I’m also of the opinion that dominos will make a huge turnover in profit and this is because you can now ditch shawarma, chicken and chips and comfortably opt in for pizza in comfort and style.

How To Make Ekpang Nkukwo (Cocoyam porridge)

 

The Creative Porridge!

Whist growing up, I never had the opportunity of eating some meals because my parent weren’t of the tribe nor do they entertain any meal they don’t know much about.

So we stuck to the normal local and simple continental dishes

Growing up, I was lucky to be sorrounded by friends who were from the middle belt especially Calabar and Akwa-ibom.

They not only introduced me to their tribal dishes but took their time to teach me how to prepare some of which my favorite is Epang nkukwo

Ekpang Nkukwo

Ekpang nkukwo is a deconstructed Cocoyam porridge carefully wrapped in ugwu leaves or Cocoyam leaves.

It’s a very stressful dish to prepare and it takes patience or you gather your family around to help.

It can be prepared ordinary or .. I’m going to be infusing a little of seafood into mine.

RECIPE

Ingredients

Cocoyam and water yam (water yam is optional) 70:30.

Palmoil

Periwinkles

Ugwu leaves or Cocoyam leaves

Crayfish

Dried fish

Scotch bonnet

Onions

Directions

  • Peel, wash and slice the Cocoyam vertically into two halves (This is so it would be easy to grate by a manual grater).

However, You can also use a mincer or a strong food processor if you don’t want to go through the hardship of manually grating it. Season the grated Cocoyam before wrapping.

  • The next stage is the real work when you have to wrap the grated Cocoyam inside the Cocoyam leaves or ugwu leaves.
  • Using a small spoon in the case of ugwu leaves, scoop some grated Cocoyam into the leaves and from the edge, wrap around it till it’s completely covered.
  • After these is done, set your pot on fire, put your periwinkles first so the leaves don’t stick at the bottom and place the wrapped grated Cocoyam inside the pot.
  • You can add your smoked fish at this stage, add your saint leaves, ground crayfish and remainder of the pumpkin leaves.
  • Add your grated pepper too, some salt, onions, water and palmoil.
  • Season to taste.
  • Cover and let it cook. While cooking, you should shake the pot slightly for the heat to be well distributed.
  • Check with a fork to know when it’s done. Dont stir too much so the wrapped Cocoyam won’t scatter. Just twice or thrice for the porridge to be well mixed.

Once done, serve hot immediately.

How To Get Your Food Products Registered With NAFDAC

We have been taking on food recipes and health for a while now and I feel it’s time to infuse some food business.

Food business is very important because it is the one that brings about money which is important for life.

NAFDAC

 In the last decade, there has risen in Nigeria, a new wave of enterpreneurs in all fields, the standard of productions have been raised even up to world standard and the food world is not an exception.

Different creative foods and drinks have been developed and packaged which are taking over from the imported ones that has been dominating the market for many years.

However, no matter how big your ideas, food formula is, it cannot be accepted to be sold in Nigeria except it is registered under the Nigerian food and drugs agency.

HOW TO REGISTER WITH NAFDAC

The National Agency For Food and Drug Administration and Control (NAFDAC) are the regulatory body that controls the influx and efflux of food and drugs in Nigeria.

They also validate the authenticity and quality of your products either food, drinks or drugs before it can be sold publicly.

STEPS TO GETTING A NAFDAC NUMBER

1. FACTORY CHECK AND SAMPLE COLLECTION

Visit the NAFDAC office in your state or the one closest to you and register. Your factory is going to get a visit from the officials.

* They are going to check your Water purification plant if you are into drinks

* They are going to check your production line

* They are going to check your workers room

* They are going to check the general neatness of the place and the equipments you possess and other things they deem fit to check

After this, if they are satisfied, you will be required to submit three samples of your products for analysis and then given a certificate of recognition as a manufacturer.

2. You have to purchase a form and fill accordingly. After filling the form, you will now write an application letter to NAFDAC stating your intention to register your product.

The application must be addressed to the Director; Registration and Regulatory Affairs.

3. After both have been done. You will attach both the Registration form and the application letter together and submit.

It could takes weeks or few months but if the forms were properly filled with no mistakes, your registration would be successful.

DOCUMENTS NEEDED TO SUBMIT AT NAFDAC

1. Your certificate of inspection and Recognition after your factory was checked

2. Your certificate of incorporation by the corporate affairs commission

3. The application letter coupled with the Registration form you forwarded to the Director.

4. Certificate of sample collections with the date and signature of the analyst

5. Trade mark issuance certificate for your brand by the ministry of commerce.

How To Perfectly Cut Up A Whole Chicken

THE TRADITION

It’s a tradition in my family that the only set of people allowed to kill and cut up a chicken to different body parts are the adults

It’s like a rite of passage the first time you hold down the chicken for your father when he is cutting up a chicken, turkey or a goat.

You also know it means you are coming of age and very soon, it would be your turn to handle the preparation .
It’s never taught. You look and put to mind every steps and skill used in cutting it up.
It’s also a culinary skill you must learn in a good culinary school. So if you never had some one put you through, Here is Me showing you with love

How to cut up a Chicken

* I always start with the laps. Make sure the chicken breast is side up and draw the laps out from the body (you might ask someone to help hold the other laps)

 

 

* Slice through the skin and work your knife around the laps (Note: A sharp knife will make your work much easier) to remove the laps.
If the joint becomes an impediment, hold the body and the lap that’s almost off and pull in an upward motion. The joint ball will come off and you can complete your cut.
* Same should be repeated for the other lap

* The next are the wings. Turn the chicken on its sides, pull away the wings and cut through joints to detach the wings

* Then, remains the body. There are different ways to remove the chest from the backbone region.

1. Lift the chicken from the bottom (anus area) and slice up to remove the whole breast.

2. Place your knife in the middle of the right and left breast and cut straight down. Then work through the ribs to remove the two halves breast completely

* Another area to be removed is the chicken butt or Parson’s nose.

Place your knife in the middle and using the solid lower palm or carpals dislodge the bone there and cut through. Then, remove easily.

The Carcass

 

The Carcass consist of the back part which consist of the back bone. Don’t throw away, cut into sizes and store in the freezer as base for soups or grills.

Why Every Home Must Have and Take Cereals

CEREALS

Cereals are underated most times as snacks and comfort food or just taken whenever you feel like indulging in junks.

 However, this is far from the truth as cereals are one of the most important part of our diet and without it, one runs a risk of having countless illnesses.

 Why are they so important?  

1. Cereals are a very good source of dietary fibres.

Sometimes I get emotional when I write, that’s  because I believe if people are well informed, they would not find themselves in bad situations.

This stabilizes sugar level and prevent cholesterol build up ultimately preventing Diabetes

It also allows for free movement of waste product in the large intestine and prevents haemorroids.

It also keeps your weight in check and makes you live long.

2. Cereals are an excellent source of breakfast from corn flakes to oats.

Why Breakfast is a must!!!

* It’s the most important food of the day as it improves concentration at work and prevents loss of memory.

No wonder many companies provide breakfast for their top workers; the engine room to their organizations

* It keeps you from consuming junks which affects your body weight and injest lots of LDL cholesterol (bad cholesterol) into your system. It summarily keeps your heart in good shape.

3. Cereals are rich source of vitamins, carbs, minerals like iron and protein so they supply energy needed and nutrients for the day and they are easily digested.

4. Cereals are healthy because they can be combined and taking directly with different fruits, vegetables and milk.

5. In the case of having a picky eater on your hands, cereals can be easily planned and incorporated into good and attractive dishes any picky eater cannot resist.

6. They contain phytosterol which prevents cancer like breast cancer by blocking oestrogen that causes breast cancer.

7. Cereals are also very good for children. This is because children requires a lot of nutrients for their body growth, daily activities. This can be gotten from cereals which is dense with nutrition.

They are also relatively cheap to procure, sweet and are easy to prepare unlike most foods.

 They save you a lot of money trying to get pastries or burgers at work.

To cap it up, one is guaranteed a healthy and strong life if one can incorporate cereal into his or her life.

Food And Drug Interactions (Food you shouldn’t take with some drugs)

FOOD AND DRUG INTERACTION

 

It was said that what you don’t know can’t kill you; Now we know, that the contrary is the absolute truth. What you don’t know kills. There are many examples to prove this starting from HIV to Diabetes.

If only they knew that ordinary protection like the use of condom or reducing the consumption of sugar could prevent them contracting the disease, they would probably have taken precautions.

So I will be doing a sensitization on the effect of food and fruit on drugs we injest into our body.

FOOD AND DRUGS

We fall ill as humans due to so many reasons from environmental to genetic and Man has come a long way in developing drugs that combats almost any type of sicknesses.

However, information about side effects of these drugs and food consumed during the use are often not well communicated to patients and to the general public as a whole.

This is getting serious now as these powerful drugs can easily be gotten at a local chemist by ignorant individuals

Here are some drugs and foods or drink you mustn’t combine together

ALCOHOL AND STIMULANT DRUGS

 

Cases of drug abuse and death are becoming rampant all over the world especially in some African countries and it affects the youth most often.

A good example of drug that is highly abused is Tramadol. Tramadol is a central nervous system depressant and combined with alcohol which is also a depressant can slow down your brain which can lead to a state of depression and finally Suicidal thoughts

Also, the combination and abuse can cause seizures. This is because the central nervous system consist basically of  the brain and the spinal cord and since tramadol is CNS drug inducer.

Taking too much will cause too much activities and reactions in the brain ultimately leading to seizures.

In general, Alcohol should not be taken with any pain relieving drink. Just ONE DRINK A WEEK WHEN TAKING THESE DRUGS CAN CAUSE GASTRO INTESTINAL BLEEDING.

DIARY PRODUCTS AND ANTI-BIOTICS

 

Ciprofloxacin and other fluroquinolones which is used for typhoid for example or tetracycline are very reactive to Diary foods and product.

You probably must have heard it before or not that when using thyphoid drugs, you should abstain from food like milk, cheese, youghurt etc

It’s actually; Do not take them alone with these drugs because they will render the drug useless. You can read about the biological mechanism here.

NSAID DRUGS AND ULCER PATIENT

 

It is no news that NSAIDs (pain releiving drugs) like Ibuprofen, Aspirins taken by an ulcer patient could be dangerous and life threthening However, many still don’t know.

The symptoms include vomiting, neusea, acute stomach pain or internal bleeding.

So if you have been diagnosed with ulcer, it is best to stay away drugs like this.

CAFFEINE AND ANTIBIOTICS

 

Caffeine which is a stimulant is very reactive to many antibiotics. Antibiotics affects the rate at which caffeine works in the body causing caffeine overdose which can cause insomnia, restlessness, dizziness etc

It is advised to stop the consumption of high caffeine containing drinks, coffees, teas and sodas before using most antibiotics

GRAPE FRUIT JUICE AND DRUGS

 

Its discovered that grape fruit juice and some of it’s closely related citruses must not be taken with cholesterol drugs, immuno-suppressant drugs and even some malaria drugs.

It increases the blood level of these medications and increases their side effects.
Examples of such are: Muscle tissue breakdown, kidney problems, General body pains, Rapid drop in blood pressure etc. Read more here
