Hello my beautiful caterbakes family, I have missed you all and I decided to come back with an amazing Plantain Frittata recipe for you all.
PLANTAIN FRITTATA
Plantain frittata is a quick fix breakfast which will keep you energized and nourished.
Its a mix of plantain, chicken, chicken franks, eggs and peppers which is usually baked but can be fried as an omelette.
Initially, i under-rated the dish because i thought i knew what fried or baked eggs and plantain tastes like
However, i was taken by surprise after tasting it for the first time. It tasted so nice i decided to make mine.
RECIPE
- 1 Fairly big plantain
- 4-5 Eggs
- Green bell pepper
- Red pepper
- Chicken franks
- A piece of fried or sauteed chicken
- Onions
- Seasoning cube
- Salt
- Curry
- little Groundnut oil
PREPARATION
Peel and dice into disc shapes your plantain, add little salt and fry in oil. Set aside in a saucer.
Dice your hotdogs and shred your processed chicken. Set aside in another saucer
Slice into strips your green and red peppers in another saucer or board.
Break and whip your eggs , add your spices salt and seasonings to taste and pour in your hotdogs, shredded chicken and your sliced peppers. Mix all together
Rub in some butter in the pan or groundnut oil and pour your egg mixture in it. Set your fried plantain in circular or spiral form in the pan containing the egg mixture. Bake until the middle is firm and done.
For Frying Method
Put little oil on the frying pan, let it get a little bit hot before pouring in your egg mixture.
IMMEDIATELY the egg mixture is inside, put your plantain in circular movement.
Do not stir while on heat and do not turn.. so you have to reduce the heat to the barest minimum so it doesn’t get burnt and the middle can get done.
